Bulgur with Raisins and Pine Nuts

Turn to bulgur when you want to change up the grains on your dinner table. It’s the perfect nutty, light and fluffy base for a mixture of refreshing herbs, raisins and toasted nuts.

Directions

  1. Toast 1 cup bulgur in olive oil in a saucepan over medium heat, stirring, 5 minutes. Add 1 1/2 cups water and 1/2 teaspoon kosher salt. Bring to a boil, then simmer, covered, until the water is absorbed, 12 minutes. Stir in 1/4 cup chopped parsley, mint and/or scallions. Add 2 tablespoons each olive oil, pine nuts and raisins and the juice of 1/2 lemon. Season with salt.
