Grilled Strawberry Granola

This crunchy (and addictive!) granola includes freeze-dried strawberries, which add a light texture and natural sweetness to the mix of oats, rice cereal, coconut and pecans. It’s remarkably easy and perhaps unexpected to make this granola on an outdoor grill in a foil pack. Just be sure to position the packet on the cooler side of the grill so the granola doesn’t brown too fast before it has a chance to fully bake.

  1. Prepare a grill for medium indirect heat. On a gas grill, turn off some of the burners; on a charcoal grill, bank the coals to one side. Keep the grill covered.
  2. Combine the puffed rice, oats, coconut flakes and pecans in a large bowl. Crush half of the freeze-dried strawberries (1/2 cup) with your hands into the bowl. Add the maple syrup, butter and salt. Stir until evenly combined.
  3. Tear off an 18-by-24-inch piece of heavy-duty foil (layer 2 sheets if using regular foil). Spray the foil with cooking spray. Spread the granola mixture on top into a 1/2-inch-thick rectangle. Bring up the long sides of the foil together and crimp the short sides, leaving the top slightly open to vent.
  4. When the covered grill registers 350 degrees F, place the foil packet on the indirect side of the grill. Cover and cook until dry on top and starting to brown, about 40 minutes. Remove from the grill, stir the granola and re-crimp the foil. Return to the grill and continue cooking until golden brown and crisp, another 20 minutes.
  5. Stir in the remaining freeze-dried strawberries, breaking up any large pieces. Let cool.
