There are many ways to play with ingredients and quantities in a Negroni, which classically contains equal parts Campari, gin and sweet vermouth. For this version, we have replaced the Campari with Cynar, and the gin with smoky mezcal. Instead of sweet vermouth, we use a combination of sweet and dry. Be sure to stir the drink until chilled with ice, then strain and serve it up in a coupe with a lemon peel.
