The combination of tart cherry juice, sweet hibiscus syrup and fresh lime makes this a lovely nonalcoholic drink to enjoy when you’re looking to relax, refresh and unwind. Mint adds a delightful cooling note, perfect for a hot summer day.
For the hibiscus-mint simple syrup: Combine the sugar, hibiscus flowers and 1/4 cup water in a small saucepan and bring to a light simmer over medium-low heat. Cook, stirring occasionally, until the sugar has dissolved completely and the mixture has turned pink, 1 to 3 minutes. Remove the saucepan from the heat and add the mint leaves. Let steep for 10 minutes, then strain into a bowl and let cool completely.
For the drink: Fill two 16-ounce glasses with ice. To each glass, add 1 cup seltzer, 1/4 cup tart cherry juice, 1 tablespoon lime juice and 2 tablespoons of the hibiscus-mint simple syrup. Stir lightly to combine. Garnish with a sprig of mint and a lime wedge.
Cook’s Note
Dried hibiscus flowers work best here, but if you are unable to find them, hibiscus tea will do the trick. If using hibiscus tea, reduce the amount added to the simple syrup to 1/2 teaspoon.
