Ingredients

  • 2 cups sugar
  • 1 cup water
  • 1 (16-ounce) bag frozen peaches, thawed
  • 1 teaspoon grated orange peel
  • 1 (16-ounce) bag frozen strawberries, thawed
  • 1 (16-ounce) bag frozen blueberries or blackberries, thawed
  • 4 to 6 (750-ml) bottles Prosecco or other sparkling wine, chilled
  • Fresh strawberries, raspberries, and blueberries, for garnish
  • Orange peel twists, for garnish

Directions

Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely.

Puree the peaches and orange peel in a blender with 1/2 cup of the sugar syrup until smooth. Strain through a fine-meshed strainer and into a bowl. Cover and refrigerate. In a clean blender puree the strawberries with 1/3 cup of the sugar syrup until smooth. Strain through a clean fine-meshed strainer and into another bowl. Discard the seeds. Puree the blueberries in a clean blender with 1/3 cup of the sugar syrup until smooth. Strain through a clean fine-meshed strainer and into a third bowl. Discard the seeds and solids. Pour each of the purees into clear glass bowls or small pitchers.

For each serving, pour 2 to 4 tablespoons of the desired fruit puree into a Champagne flute. Slowly pour enough Prosecco into the flute to fill. Gently stir to blend. Garnish with the whole berries, as desired, and serve.

Do-Ahead Tip: The fruit purees can each be made 1 day ahead. Cover separately and refrigerate.

    Full of Pulp

Rated: 2 stars out of 5
I made the peach flavor and even after straining through a mesh strainer I have for making jam, it was extremely pulpy. I... have had bellinis at restaurants before and this was not even close to the flavor or texture. I probably won't try it again.Read more

I made these for our 4th of July bbq, and the girls loved it. I loved the peach, but I guess i didn't strain the blueberries... too well, because i ended up with a lot of little blueberry chunks. I think ill try the mango next time.Read more

Delicious and perfect for a party

Rated: 5 stars out of 5
Followed the recipe exactly, making all 3 flavors - peach, strawberry, and mixed berry. Couldn't be easier. Took a little... bit of time to strain all those purees but all in all it wasn't that much work and the guests at my party RAVED about them. Many asked for the recipe. Thanks Giada!Read more

    Bellisimo!

This was a breeze to prepare in advance and so much fun. I offered mango, strawberry and blueberry purees. I probably... wouldn't do blueberry again - it was too sweet, but the others were fantastic and all of the colors were so pretty. Sparkling apple cider worked well for those who preferred an alternative to Prosecco. You could probably make the purees and freeze them (with a layer of plastic wrap across the top to prevent any freezer burn) and thaw in the fridge when ready to use.Read more

    Party Time

We are a big italian family but only drink usually lemonchello, this was a nice and fun summer drink. I used fresh berrys... and let them make a syrup of their own. I smooshed the berrys with ither a electric beater (beater) or a wire wisk then let them sit in 1/4 to a little more of sugar to make their own syrup. Then used the simple syrup as directed. Also to strain I used one of the strainers that has a rotating knob on the side and it made it SOOOO much easier, u might get a few seeds from the rasp. but you wont be able to tell the difference since most of the seeds come out in the sifter and you can enjoy the blue berrys using a sifter :) I used champ. as well and a good dessert fizzy wine, wow. This was great. Thanks GiadaRead more

I used this idea for my daughters high school grad party so instead of sparkling wine we used sparkling apple cider and... sparkling water. It was a huge hit !!! Everyone thought I was genius and I did give the credit to the foodnetwork.Read more
