Ingredients

  • 1 pound whole-wheat linguine
  • 1/2 cup part-skim ricotta
  • 3 tablespoons olive oil
  • 1/2 pound French green beans, trimmed and halved lengthwise
  • 1 clove garlic, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup halved cherry tomatoes
  • 1 lemon, zested

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1 cup of the cooking water. Transfer the hot pasta to a large bowl and add the ricotta cheese. Toss to combine.

Meanwhile, in a large, heavy skillet, warm the olive oil over medium-high heat. Add the green beans, garlic, salt, and pepper and saute for 4 minutes. Add 1 cup of the pasta cooking liquid and continue cooking until tender, about 4 more minutes. Add the pasta with ricotta to the pan with the green beans and toss to combine. Add the tomatoes and gently toss. Transfer to a serving plate and top with lemon zest. Serve.

    I make giada's pasta's quite a bit. I have never been really disappointed. This was good but not her best recipe. I might... make it again, but it is nothing that I will crave or rush to make in the next month. If you like pasta, this one is alright. Just alright is all that I can say about it.     I'm not one of those naturally good cooks. I have to work at it and have a hard time finding foolproof recipes. I made this... for the 3rd or 4th time tonight and each time my husband and I are pleasantly surprised by how good it is. What a bonus that it's healthy to boot! Thanks for sharing this one Giada. I can't imagine it tasting better, but I might try the suggestion of red pepper flakes next time since we do like a little spice. ;-)Read more

    I usually love everything Giada makes, but this dish was terrible. It had no flavor and the texture was mushy. Meat would... have definately helped. My husband said he liked it at first to keep from hurting my feelings, but by the end, even he had to admit it was awful. please don't make this!Read more
