Ingredients

  • 8 hard boiled eggs
  • 4 teaspoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh chives, finely chopped
  • Salt and pepper
  • 4 pieces whole-wheat wrap bread (9 inches in diameter)
  • 1 red bell pepper, cut into strips
  • 12 thin slices red onion
  • 8 leaves romaine lettuce, torn into pieces (about 1/2 cup)

Directions

Dice 4 whole eggs and 4 egg whites and put into a small bowl. Add the mayonnaise and mustard and stir with a fork, mashing somewhat for desired consistency. Stir in chives and season with salt and pepper. Place wrap bread on a plate and spread the egg salad in the middle. Top with the peppers, onion slices and the lettuce. Fold into a wrap sandwich.

    This is an excellent meal and I find it disturbing that "Anonymous" called Ellie a fraud! One of the reasons there is so much... disease in this country is from the "substitutes" that Anonymous demands! For example, the "substitute" sweeteners, condiments, and flavor enhancers that contain neuro-toxins, etc.! Ellie creates recipes from natural foods that are healthy AND tasty! If you can't eat an egg, then don't use this recipe, or use tofu like Veronica did and don't complain about it! Read more

    Vegetarians/Vegans Don't be discouraged!

    Vegetarians: I replaced the eggs with cubed firm tofu instead. And we all know how bland tofu can be, so I just lightly pan... fried the cubes in EVOO with garlic powder, salt, and pepper. Replaced the mayo with veganaise. And that's it! Was delish, same consistency as egg salad. Great light snack and I will be making this again. Read more
