Ingredients

  • 4 cups old-fashioned rolled oats
  • 2 cups sweetened, shredded coconut
  • 2 cups sliced almonds
  • 1 1/2 cups dried cherries, chopped
  • 1/2 cup vegetable oil
  • 1/3 cup good honey
  • 2 teaspoons ground cinnamon

Directions

Preheat the oven to 350 degrees F.

Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.

    Tasted great before it was baked, and unfortunately followed the recipe. When baking this granola, lower temp to 325 and... bake only 20 min. Add coconut and cherries towards the last 5 min. as they'll burn otherwise. I had to dump the entire pan trash.Read more

    This is such an easy recipe. I have been making Ina's granola once a week for several years. My husband has it every... morning for breakfast. I always double the recipe and bake it in a roasting pan, stirring every 10 minutes for about 40 miinutes. I NEVER bake the cherries and only add them once the granola has baked. I also always add extra sliced almonds, plain sunflower and pumpkin seeds (and increase the oil/honey mixture proportionately) and often use maple syrup instead of honey or use 1/2 honey, 1/2 maple syrup. It really adds a nice flavor. The granola keeps very well in an airtight container and makes great gifts, especially at Christmas. I pack it in clear cellophane bags with a holiday ribbon and cinnamon stick and recipe attached. My friends always look forward to receiving it. Read more

    I love making homemade granola. This recipe is good, but I did find the temperature setting to be too high. I suggest setting... your oven to about 330-335 degrees instead of 350. Also, I add my coconut halfway through the cooking process--maybe even later--so that it doesn't burn. I add my cherries during the last five minutes because for me they too were burning. AND I only bake it for about 25 mins. A few of my own preferences: I use canola oil instead of vegetable. I also add a pinch of salt because I like the contrast of sweet and salty. I also add a little bit of brown sugar--maybe 1/4 c. or less because I like the flavor with cinnamon. Read more

    The granola is great and we plan on using it for yogurt parfaits! While the coconut was a great addition, I did not include... the cherries as my family does not like fruit in their granola. As far as the baking time - I set my timer for 10 minutes and then stirred the granola, set it for another 10 minutes, stirred, and then only set it for a couple more minutes. So total baking time was about 22 minutes. Next time I will just stop at the 20 minute mark. It is delicious even as a snack while watching tv.Read more
