Creamy Cucumber Salad

Ingredients

  • 4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
  • 2 small red onions, thinly sliced in half rounds
  • Kosher salt
  • 4 cups (32 ounces) plain whole-milk yogurt
  • 1 cup (8 ounces) sour cream
  • 2 tablespoons champagne vinegar or white wine vinegar
  • 1/2 cup minced fresh dill
  • 1 1/2 teaspoons freshly ground black pepper

Directions

Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.

Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.

When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.

    I've already rated this recipe as excellent. I have not made it yet, but I love cucumbers, red onion, yogurt, and sour... cream. So, how could it not be delicious? Null doesn't know what she's talking about. The salt is used to extract the water from the cucumbers and onion. Making this dish not so runny, just crisp and flavorful. I'm sure I will love it.     Anyone who is familar with cooking or dealing with certain vegetables would KNOW that salt is somewhat necessary to bring out... flavor, juices, and bitterness. Take the eggplant for example, heavily salting it to get the juice and bitterness out. She patted the cucumbers with paper towels which takes a lot of the salt off, and the salt also drains into the liquid at the bottom of the bowl which is then discarded. I feel that comment was totally unnecessary. And who cares! She makes a lot of great looking recipes, she looks as happy as she can be. Salt is not the "key" ingredient why people are over weight anyhow.. just ridiculous! Read more

    This is a delicious recipe, so refreshing and healthy. Use low fat yogurt if you're concerned about the calories and fat. ... Null, I wilsh you could be banned from reviewing on this website.     "Null", that comment was simply unnecessary. This recipe is interesting, not exactly in the best way....however, I don't see... how Ina's weight plays into a recipe review. How would you feel if someone was writing about you?....Although I can only imagine that you would say you don't care, but regardless it would hurt your pride whether you admit it or not.     I agree with Colleen. I think Null is more interested in what someone looks like than what they have to offer. And Null-... just for your information - the salt draws out the liquids and then you have to "rinse" the cucumbers and onions, which means all that salt just goes down the drain! Doesn't sound like you know that much about cooking! Ina has so much to offer. Her recipes are simple, easy to follow and taste good. I think that is what a lot of us are looking for. I've made this recipe twice -- the first time I didn't have any dill but didn't think my husband would notice -- but he said -- it needs dill!! who knew! Next time I used dill and it was fantastic!! We had it with grilled chicken breasts , corn bread muffins from Cooking Light and it was fantastic - it was a great warm southern evening dinner on the deck with a bottle of wine. We're planting cucumbers in garden again this year so we can have this again!Read more
