Creamy Cucumber Salad

Ingredients

  • 4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
  • 2 small red onions, thinly sliced in half rounds
  • Kosher salt
  • 4 cups (32 ounces) plain whole-milk yogurt
  • 1 cup (8 ounces) sour cream
  • 2 tablespoons champagne vinegar or white wine vinegar
  • 1/2 cup minced fresh dill
  • 1 1/2 teaspoons freshly ground black pepper

Directions

Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.

Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.

When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.

    This is a cool, fresh tasting salad for a hot summer night and goes well with other Mediterranean foods. Other than the... cucumber and onion, I cut the amounts of all of the ingredients in half and was happy with the ratio of dressing to cukes.Read more

    I love this recipe (and so did the rest of my family--and they all don't like the same flavors). Instead of vinegar I use... lemon juice and I also add in freshly chopped mint and parsley to make it more like Tzatziki. To make sure the cucumbers don't get too mushy, I cut the slices thicker so they have a bit of crunch left. I also found the salad had enough salt just from the cucumber and onion mixture. I've made this recipe twice and found that if you're in a pinch and don't feel like draining yogurt and cucumbers in your fridge, Greek yogurt is a great substitute--it has the same (if not better) consistency than the regular plain yogurt.     I've always made cucumber sald with just white vinegar, a bit of sugar and sometimes added sour cream. I made this recipe... with peeled and sliced cucumbers, half a red onion thinly sliced and put in colander with kosher salt to let them drain. I also used Fage greek yogurt and lined a strainer with a paper towel to drain the yogut. After about 2 hrs of everything draining I put the cuke and red onion in a lge bowl and addred freshly ground pepper and fresh dill then added some champagne vinegar. Separately I mixed up the 6oz of yogurt with 2T sour cream, black pepper and champage vinegar and a bit of kosher salt. This way my husband can use the yogurt dressing if he'd like. Oh - I also added dill to the yogurt. I think it was absolutely great and reduced the fat and calories as opposed to using all that sour cream. Read more

    I usually love Ina's recipes and have collected all of her fabulous cookbooks. This recipe was, however, a huge... disappointment. Made exactly as described but ended up throwing the entire dish out. Was very bland and tasteless - what a waste of good ingredients. Read more
