Ingredients
- 4 pints grape tomatoes, red or mixed colors
- 1 1/2 cups small-diced red onion (2 onions)
- 1/4 cup good white wine vinegar
- 6 tablespoons good olive oil
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh parsley leaves
- 1 1/2 pounds feta cheese
Directions
Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.

This salad is GREAT! My sister made it for a Mother's Day BBQ & it was wonderful! I put the leftovers over some baby spinach for a great lunch & enjoy the next day as well. Fabulous! I had to come get the recipe, will be a summer staple. I can't wait to make this with fresh tomatoes & herbs from the garden.

This was a wonderful salad.....if you decide to make this please, please, please use only fresh parsley and basil, dried herbs will not cut it in this recipe! Perfect summer salad!

This recipe is totally yummy. I left off the onion, because I don't like raw onion. I also cut the salt in half. Feta is super salty, so I was afraid it would be too salty. It was fantastic!
