Ingredients

  • 3 cups chopped yellow onions (2 large onions)
  • 2 tablespoons good olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
  • 1/3 cup Worcestershire sauce
  • 3/4 cup chicken stock
  • 1 1/2 teaspoons tomato paste
  • 5 pounds ground turkey breast
  • 1 1/2 cups plain dry bread crumbs
  • 3 extra-large eggs, beaten
  • 3/4 cup ketchup

Directions

Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

    This is meatloaf the way it should be! I use this as my standard recipe now. The stock and onion mixture makes it incredibly... moist, and it has a ton of flavor from the thyme and worcesterchire. Goes great with potato gratin and a veggie. I rarely need a 5 lb meatloaf, so I cut the ground turkey to 2 lbs or so- be sure to cut back on the stock a bit if you do this or it will end up wet. The leftovers are great!Read more

    This recipe will now be a part of my regular meal plans. My family absolutely loved it; particularly we noted the texture... and how flavorful it was. Second helpings of turkey meat loaf rarely existed until this recipe came along. I did add a few extra ingredients as suggested from previous comments: I adjusted the recipe ingredients for a 2-lb. ground turkey and used only 1/2 of a large white onion, chopped plus added the following to the saute: 1/2 cup each of chopped green and red bell pepper, 3 cloves of chopped garlic, and a couple of shakes of granulated onion, garlic and seasoned salt. Omitted the catsup but did bake it with a pie pan of water underneath. Baked it for 1 hour, and 15 minutes. I wanted to bring what little leftovers for lunch the next day to the office, but my kids told me they got dibs to it! Thanks Ina Garten! Read more

    This is just the best meatloaf of all time. My husband is not a fan of anything but the old fashioned meatloaf, and wasn't... crazy about this the first time, I made it with the all white meat ground turkey and the texture is more to his liking. No one found this to be dry or boring. I think the pan of water underneath while baking is a must for this. It is a regular with our family and also the elderly neighbor that I make dinner for every night. This is a greast diabetic entree! This freezes well and is so delicious on a sandwich. If I am pressed for time, I make this into mini meatloaves and adjust the time accordingly.Read more

    Turkey meatloaf can be pretty flavorless but this was deliciousl! I cut the recipe down for 1.5 lbs meat - added fresh garlic... with the onions, used italian bread crumbs and added about 1/4 c half & half. You can also use a different topping if you prefer.     This meatloaf is so good, I make it at least once a month and freeze it in slices for quick meals. I've only had one so-so... batch, and that was made with extra-lean all white meat ground turkey - it was more compact, heavy, and dry. But made with run-of-the-mill ground turkey, it's fabulous. I've had numerous requests for the recipe. YUM!!!Read more
