Ingredients

  • 3 cups chopped yellow onions (2 large onions)
  • 2 tablespoons good olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
  • 1/3 cup Worcestershire sauce
  • 3/4 cup chicken stock
  • 1 1/2 teaspoons tomato paste
  • 5 pounds ground turkey breast
  • 1 1/2 cups plain dry bread crumbs
  • 3 extra-large eggs, beaten
  • 3/4 cup ketchup

Directions

Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

    I reduced this recipe by about half since we're a small family, & 5 pounds of turkey is a lot! It was excellent - moist,... flavorful and held together very well. So often when I make meatloaf, it falls apart when I try to slice it, which makes meatloaf sandwiches tricky. This one stayed together very well. Instead of using all ketchup on the top, I used about half ketchup and half BBQ sauce from a bottle. It makes it a bit smokier and a little sweet. Very good recipe!Read more

    This recipe was a hit with both my husband , and the kids too! Like many others I halved the recipe, 5lbs of meatloaf was... inconceivable to me!     No joke this is the best meatloaf I have ever eaten. No one will know or care that it is turkey because it is so moist and... juicy. My husband requests this meatloaf once a week and I cut the recipe down to about one third (to accommodate one ground turkey package) since its just the two of us. I ad a little bit of extra seasoning and some diced carrots to the onion mixture. The secret is to use a thermometer to keep it from overcooking and drying out. Read more

    Made this tonight but halved the recipe (we only have two adults eating plus a toddler). It was really just ok. I've had... better but overall it was good and my husband liked it. I may make it again just because it was easy and my toddler likes meatloaf. I used a little over two pounds of ground turkey, two large eggs, one onion and halved the rest of the recipe. 5 lbs just seemed like way too much for two and a half people! We have plenty of leftovers with 2 lbs. I didn't add the pan of water but my meatloaf didn't really crack and I've never had a problem with that before anyway. Read more

    I saw this recipe for turkey meatloaf and decided to try it because I have had issues with turkey meatloaf being tough and... dry. This meatloaf was moist and flavorful. My family loved it especially after browning the onions and spices and then adding the worcestershire. They all came in the kitchen and said it smelled really good and what was I making. I know I will be making this again real soon as it was such a hit and my family did not have to know it was also a healthier version.Read more
