BLT Lettuce Wraps

These are fun for kids to eat. You can cut everything up and let them assemble. Although bacon is not going to win any health awards, most agree that it is super tasty, and Emmy can’t get enough of it.

  1. Set up a grill for indirect heat by building the coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  2. Place a cast-iron pan over the direct heat side of the grill. When the pan is hot, add a drizzle of olive oil along with the bacon. Cook until crispy, 5 to 8 minutes. (If the bacon is browning too quickly, move the pan to the indirect heat side of the grill to cook more evenly.) Drain the bacon fat and save for future use. (Bacon fat will last in your fridge for 3 to 5 months.)
  3. To a mixing bowl, add the mayonnaise and mustard and whisk to combine. Season lightly with salt and pepper. Fold in the tomatoes, chives and crispy bacon. To serve: Spoon the BLT mixture into lettuce leaves and arrange on a platter. Add freshly cracked pepper to the top, then serve.
