Ingredients

Marinade:

  • 1 bunch cilantro, chopped coarsely
  • 1 habanero chile, chopped
  • 4 shallots, chopped
  • 2 lemons, zested
  • 2 limes, zested and juiced to 1/4 cup (juice more limes if necessary)
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 vegetable oil
  • 16 jumbo shrimp, cleaned, deveined
  • 8 sugarcane skewers
  • Marinade
  • 1/4 bunch cilantro leaves, as garnish

Directions

Puree all marinade ingredients in a blender. Reserve 2 tablespoons of marinade.

Skewer two shrimp per sugarcane and place in marinade and refrigerate. After shrimp has marinated 2 to 3 hours, grill for about 3 to 4 minutes on each side, making sure they are fully cooked.

Serve with a drizzle of the reserved marinade and cilantro, as garnish.

    I've made this recipe many times, sometimes changing it up a little depending on my mood, but every time I've made it for family and/or friends, it has been loved by all! Personally, the habanero adds a nice kick, but I prefer the *taste* of jalapenos so I use two or three jalapenos instead of the habanero. I think this is a great base recipe for everyone to start with and modify to your own tastes, with some liking or disliking cilantro a little more or less than others, etc. But it's a good recipe that can easily be slightly modified and still be delicious!     I made this dish last night and absolutely loved the marinade! I loved the complexity of the flavors and how easy it was to make. I did omit the oil though to cut back on fat and calories. The part of the recipe I didn't like was the "bunch of cilantro." Exactly how much is a bunch? I added probably 1 c of packed cilantro and it was too much. Other than that, the recipe was wonderful and the ingredients easy to come buy in a small town.

    Save your dough. I followed the recipe to the T and what I ended up with was really boring. I had to add garlic and ginger just to give it some life. I suspect it would be better with less oil.
