Ingredients

Marinade:

  • 1 bunch cilantro, chopped coarsely
  • 1 habanero chile, chopped
  • 4 shallots, chopped
  • 2 lemons, zested
  • 2 limes, zested and juiced to 1/4 cup (juice more limes if necessary)
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 vegetable oil
  • 16 jumbo shrimp, cleaned, deveined
  • 8 sugarcane skewers
  • Marinade
  • 1/4 bunch cilantro leaves, as garnish

Directions

Puree all marinade ingredients in a blender. Reserve 2 tablespoons of marinade.

Skewer two shrimp per sugarcane and place in marinade and refrigerate. After shrimp has marinated 2 to 3 hours, grill for about 3 to 4 minutes on each side, making sure they are fully cooked.

Serve with a drizzle of the reserved marinade and cilantro, as garnish.

    I loved this marinade and will definitely try on other fish/meat in the future. One habenaro does the trick for sure -... just nice and spicy enough to make the mouth tingle. I used some massive prawns and only had the wooden (soaked) skewers. Delicious, unique, herby flavor. Prawns were absolutely beautiful off the grill - everyone raved.Read more

    This sauce was so fresh-tasting. I cut back on the soy sauce by 2 TBSP, and added 2 TBSP dijon mustard. Sauce was so good I... set some aside and served it with baked tilapia a few days later. I'll definitely make again. Read more

    I made this for a wedding shower bbq for 50 last week. People really loved the flavor, its unique, and complex. The lime and... lemon flavor, mixed with the coconut and habanero chile, was a great combination. I kept the shrimp in the shell, but i think i'll take it off next time, makes it easier to eat. I just used regular wooden 10 inch skewers, soaked in water. It has like a thai taste to it. When i first tried the sauce after i pureed it, i had my doubts, but on the shrimp, it really was delicious. A truly gourmet recipe.Read more

    nice quick marinade. I gave it an extra toss in the marinade after cooking, Taste to make sure the end result has enough... citrus, if not, add more lime into the marinade with a final coating. I had leftover marinade, tried it on some Cod. It was ok, won't do that again, better on the meatier shrimp. I think scallops would work better.Read more

    Very Good - Added Dijon Mustard

    This recipe was very good. I added dijon mustard to the recipe and it gave it a little extra "kick". Definately a favorite.
