Roasted Broccoli with Cherry Tomatoes

Ingredients

  • 2 bunches broccoli, cut into 2 1/2-inch long florets
  • 1 medium shallot, roughly chopped
  • 1 pint cherry tomatoes, whole
  • 3 cloves garlic, roughly chopped
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1/3 cup grated Parmesan

Directions

Preheat oven to 450 degrees F.

Add broccoli to a large bowl. Add the shallots, cherry tomatoes, garlic and red pepper flakes with 4 tablespoons oil in large bowl. Sprinkle with salt and pepper. Toss to coat and spread onto large baking sheet. Roast until the stems are tender-crisp and lightly golden brown, about 18 minutes. Grate the Parmesan over the broccoli while it's hot.

    Can't Eat Broccoli Any Other Way Now

    Since I tried this recipe I really don't like broccoli any other way! It's hard to believe that broccoli could taste so... different by simply roasting it. Often, I skip the shallots and tomatoes and simply season with salt, pepper and red pepper flakes and olive oil. And parmesan makes everything better! Great recipe Neelys!Read more

    This was great!! I actually used frozen (and thawed) broccoli florets and ended up pan roasting/browning the whole mixture... in a skillet (only because my oven wasn't usable at the time). One of my daughters had 3 helpings and kept saying "these veggies are so good!" Will definitely make this again - love the Neely's!!Read more

    How can something so easy taste so good? Well, it does. I had left over broccoli and cauliflower florets from a party that... I used in this recipe.     Though some ppl wonder, why some rate a dish 5 stars if you don't add this, or subtitute something else? Well, I rate this 5... stars, cause it's a dish that I found delicious, even if I didn't add the cheese. It existed, and that's what counts. I love it, and really want to thank the Neelys for making my dinner a blast. I am in here often trying to find a side dish when I make dinner, cause I really suck when it comes to that.
