Ingredients
- 8 ounces baby spinach, about 5 to 6 cups
- 1 cup mandarin oranges, drained
- 1/2 cup chopped red onions
- 1 tablespoon orange marmalade
- 2 tablespoons red wine vinegar
- 1/3 cup extra-virgin olive oil, eyeball the amount
- Salt and pepper
Directions
Arrange spinach leaves on a large platter or individual salad plates. Top with mandarin sections and chopped red onion. Whisk together marmalade and vinegar. Stream oil into dressing while continuing to whisk.
When you are ready to serve, pour the dressing over salad and season with salt and pepper.

Make the dressing ahead of time (couple of hoursto allow the ingredients to flavor each other. I added a bit more marmalade for a more orangey flavor and added glazed pecans. Superb salad!!

Just tried this tonight... Great flavor and so simple! My husband is not normally a big salad eater but he had 2 helpings of this tonight and loved it!!

Delicious. Although I was out of marmalade, I substituted with orange juice, zest and a little sugar. It turned out really nice, different texture completely but lighter and more fruity and I think from now on I'm gonna keep doing that :
Also, I will minimize the red onions next, they clashed a little with the rest for me, and my guests agreed. I think if you have really delicious baby spinach then the dressing and oranges are all you need to keep this salad simple yet delicious.
