French Cut Green Beans with Almonds and Fried Onions

Ingredients

  • 1 pound fresh green beans or frozen French-cut green beans
  • Salt
  • 1 to 2 tablespoons unsalted butter
  • 1/4 cup slivered almonds (2-ounce package)
  • 1/2 lemon, juiced
  • Ground black pepper
  • 1 can fried onions

Directions

Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.

Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.

Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

    Tastes way better than the classic casserole

    This was so good (even though I messed up the recipe a bit). My kids were screaming and I didn't quite read the recipe... right. I was supposed to brown the almonds before adding the green beans, but I put it all in at the same time, so the green beans got a little over cooked. Don't skip the step where you cool the bean after cooking - this will help it to maintain the green and firm texture. Remember that it cooks a bit more when you saute it with the almonds and lemon. I didn't use the whole can of fried onions (trying to keep it a bit healthier) and it was still great. I used frozen green beans and it was great. I will make this again - even for a weeknight side - but definitely for Thanksgiving again next year.Read more

    I made this for a dinner party last night, and people really liked them. I made the mistake of cooking them a bit too long,... and overcooked the beans, but that was my fault. Remember to take them out of the water a little early as you can cook them a bit more later if you need to.Read more

    This dish is easy and elegant and really tasty. My picky 12 year old daughter loves this recipe and says it is the only way... she can eat green beans! The lemon gives a great flavor. I bought gourmet fried onions (imported from France) at our local specialty store and I think it really makes a difference. This can be used at a dinner party or for a simple weeknight dinner. And it is so easy--a winner!Read more
