I make this regularly as an alternative to regular mashed potatoes at holiday. Everyone loves it.

I made this recipe as part of a Caribbean themed birthday party, and none of my guests cared for this dish. Personally, I prefer my sweet potatoes au naturel, except for maybe a spot of butter. Sweet potatoes have a wonderful flavor on their own, and I thought the rum overwhelmed the natural yumminess of the wonderful orange flesh. I usually LOVE Rachel's recipes, but this one didn't work for me.

I think as a regular sweet potatoe recipe the rum would be too strong, but I made this as a side for Guy Fiori's recipe "Cuban Pork Chops with Mojo" and the contrast was perfect. My husband doesn't like dishes that have a liquor taste, but he said this was perfect with the chops. It only took me 12 minutes to cook the sweet potatoes. I think minus the rum with less sugar and more butter, it would make a great standard mashed potatoe recipe! Instead of whole shots of rum, by the way, I used two tablespoons, and just two tablespoons of lime juice.
