Add the blackberries to a bowl, then sprinkle over the granulated sugar, lime juice and coconut rum. Stir, then let steep for about 10 minutes.
Meanwhile, add the cream, powdered sugar and lime zest to the bowl of a mixer and whip to soft peaks, 1 to 2 minutes. Mash the blackberries with a fork. Add the berries and liquid to the cream and gently fold in, creating a swirling pattern.
Spoon the whip into six individual glasses and top with the toasted coconut and sprigs of mint.
