This cocktail begins with a syrup flavored with juicy blood oranges, blackberries and fresh mint. The syrup can be made in advance, so that when you are ready to serve, you just add rum, ice and sparkling water.

4 wide-mouth 16-ounce mason jars
For the syrup: In a small saucepan, add the blood orange zest and juice, blackberries, sugar and 20 mint leaves. Bring to a boil, stirring and smashing the blackberries and mint leaves, then remove from the heat and allow to cool for about 10 minutes.
Divide the mixture among 4 wide-mouth 16-ounce mason jars (about 1/3 cup each). Add one slice of blood orange and 4 mint leaves to each jar. Use immediately or top with the lids and chill until ready to serve.
To serve: Top each jar with ice and 2 ounces rum. Secure the lids and shake. Remove the lids and top each with 6 ounces sparkling water and more ice if desired.
