Heat skillet. Add olive oil, onion, garlic, coriander, cumin, and saute until you start to smell the spices. Add beans and 1 cup of water. Let simmer for 15 minutes then start pressing the beans with a potato masher. Add cilantro, salt and pepper and allow to simmer for another 20 minutes. Add water when needed until you reach desired consistency.
