Ingredients
- 1 (15-ounce) can, no-salt added black beans
- 1 (10-ounce) can diced tomatoes with chiles in sauce (recommended: Ro'tel)
- 1 tablespoon lime juice
- 1 teaspoon crushed garlic (recommended: Christopher Ranch)
- 1/2 cup frozen chopped onion (recommended: Ore-Ida)
- 1/4 cup finely chopped fresh cilantro leaves
Directions
Combine all ingredients in a medium saucepan. Stir thoroughly. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes.
Place in a serving dish and serve hot.

I love these beans! I'm not even a big fan of black beans but they looked so good that I had to try them. They were delicious! I served them over plain white rice. I did use salted beans since that's all my store had and I didn't think it was overpowering.

I'll admit that I was quite skeptical about this recipe considering all of the canned ingredients used, but...I was amazed at the big flavors and fresh taste of this dish. I love spicy food, so I added one fresh minced jalapeno that I sauteed with the onions. An excellent yet simple dish that I will make again and again!
