Ingredients

  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 4 medium ripe bananas
  • Oil, for grill pan
  • 1 pint vanilla ice cream

Directions

Preheat a grill pan or grill grate over medium heat.

Melt butter in a small saucepan over medium heat. Add the brown sugar, salt, and pumpkin pie spice. Bring to a boil, stirring until the sugar has completely dissolved. Simmer until mixture thickens about 5 minutes. Remove from heat, stir in the vanilla and set aside.

Cut each banana lengthwise, leaving the skin on and brush with butter and brown sugar sauce. Oil the grill pan and arrange the bananas, cut side down, on the pan. Grill until caramelized, about 4 minutes. Turn the bananas and grill until the skins are blackened bananas are soft and warmed through, about 5 minutes more. Baste frequently with the sauce during the cooking process.

Remove from grill to a serving platter and serve with a scoop of vanilla ice-cream, drizzled with remaining sauce.

    it was great even though I didn't get the sauce right, but that's my fault. I'm a good cook, but I've been having a huge problem making caramels lately. ugh..

    but it was still awesome served with homemade whipped cream.

    ps..the reviewer who gave only one star because of the banana peel comment, the bananas are easier to move from the grill to the plate without falling apart. I find it easier to eat them as well, as you just scoop out the banana. no mess. no fuss. pretty rude to give only one star for a question and not a review, btw.

    and for the comment about her recipes/drink recipe, etc. Sandra herself, does not put these recipes up here, so not very nice of you to give her only one star for a complaint that had nothing to do with the recipe.
