Ingredients

  • 1 (3.4-ounce) box instant butterscotch pudding
  • 1 (8.5-ounce) box instant corn muffin mix
  • 3 cups milk
  • 3 eggs, lightly beaten
  • 1/2 cup dark or robust molasses
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Directions

Spray a 4-quart slow cooker with cooking spray; set aside.

In a large mixing bowl, whisk together pudding mix, corn muffin mix, and 3 cups of milk until thickened, about 2 to 3 minutes; set aside.

In a medium mixing bowl, whisk together remaining ingredients. Stir into pudding mixture until well combined. Transfer to slow cooker. Cover and cook on high for 1 hour. Turn slow cooker to low and stir. Cover and continue cooking for 1 more hour. Stir, cover and cook for 1 hour more.

Serve warm.

    I love Indian Pudding, think Sandra Lee has a lot of great ideas, but she really missed the mark on this recipe! It had a weird taste, possibly due to muffin mix & butterscotch pudding. I recommend you follow a recipe from a NewEngland cook book. There was nothing short cut about this recipe either! Truly a waste of time & ingredients!

    I had never made (nor heard of Indian pudding but it sounded perfect for Thanksgiving. I did not see the episode where it aired so I didn't know what to expect. I followed the directions exactly. I used a taller, more narrow slow cooker because it seemed appropriate for the size of the pudding mix. Ended up with a thick, creamy consistancy. Loved not having to fuss over it while I prepared my other 15 side dishes & desserts. Everyone said it smelled good but would not try it because they didn't know what it was, chickens. The reason for the four star rating is because only my brother tried it. He will eat anything I cook.:

    Followed the recipe exactly because I hadn't read any reviews..and even forgot to stir it until the last hour..and it turned out amazing! I did let it cook on low an extra hour..so 1 hour on high, 3 on low...it wasn't done at the 2 hour mark. Came out perfect and really, really yummy. I would definitely make it again and not change a thing!
