Ingredients
- 2 tablespoons canola oil
- 1 medium onion, diced
- 2 teaspoons chopped garlic
- Salt and freshly ground black pepper
- 1 (10-ounce) bag frozen shelled edamame, thawed
Directions
Heat oil in a large skillet over medium heat. Add onions and garlic, season with salt and pepper, to taste and saute for 2 minutes. I was looking for a way to prepare edamame other than heating it up in the microwave with salt. I don't think I'll go back to that! Enjoyed the flavor of the saute'd onions, but it seems the overall flavor was missing some component - perhaps a dash of soy sauce?

This dish was excellent with the Tilapia. A great way to add a healthy protein to your diet. I added a little sea salt some cliantro and a splash of lemon juice. I also added about 1/4 cup corn as I had already cooked it for my children. It would have been just as good without but I think it added nice color to the dish. I'll keep this as one of my staple side dishes.
