You can create up to five timers

Ingredients

  • 2 flour tortillas
  • 2 roma tomatoes, sliced
  • 2 fajitas, leftover from Fajita Skewers recipe
  • 1/2 cup shredded Jack cheese

Directions

Preheat the oven to 375 degrees F.

Put the tortillas on 2 baking sheets. Top each tortilla with the sliced tomatoes. Divide the beef and vegetables from the leftover fajitas over the tortillas. Sprinkle the cheese evenly over the top and bake in the oven until the cheese is melted and golden and the tortillas are crispy, about 10 minutes. Transfer to serving dishes and serve.

    This is great! In a hurry and want to use those left over tortillas in the fridge? Be creative with the toppings - just make sure they will be fully cooked in the 10 minutes at 375 F. oven. May have to pre-cook some items. I used a small amount of thick tomato sauce so the tortilla would not be soggy. Some tortillas are thicker than others. Thick ones stand up to more toppings (or double up as previous reviewer said. Quick, easy and great as you control the flavors. Try different toppings that sound good.
