Smashed Potatoes

Ingredients
  • 2 pounds medium red-skinned potatoes, scrubbed
  • 2 teaspoons kosher salt, plus additional for salting water
  • 1/2 cup milk
  • 3 tablespoons unsalted butter
  • Freshly ground black pepper
  • 2 to 4 scallions (white and green parts), finely chopped
Directions

Put the potatoes in a medium saucepan, cover with cold water, and season with salt. Bring to a simmer over medium heat and cook until potatoes are very tender, about 20 minutes.

Heat the milk and butter in a small small saucepan until hot. With a potato masher or large fork, roughly smash the potatoes, while adding the hot liquid. Stir in half of the scallions, season with the salt and pepper, to taste. Transfer to a serving bowl and scatter the remaining scallions on top before serving.

    Like any recipe you need to make it your own. The onions add a new flavor to a standard favorite. This recipe is super easy to make and very tasty. I added extra milk and butter as my children like creamy mashed potatoes.
    These smashed potatoes were pretty good. I would recommend sauting the shallots before adding them to the smashed potatoes, they were a bit to raw for me.
    aside from no directions on the size the potatoes should be cut, this was alright. slightly bland, for my tastes.

    Even though there was a misprint in the recipe it was great. All my family loved it. Will make again.
    I watched the show and agree that Tyler did not put in peppercorns or bayleaf during filming. But adding this to the milk while it warms up would add good flavor. I am not sure that it is a mistake.
    I watched the show, and they didn't add anything but the ground pepper and scallions. Peppercorns and bay leaf are probably an error. Never heard of a bayleaf in potatoes.
    MY QUESTION WAS ASKED BY THE LAST REVIEWER. WHAT BAY LEAF AND PEPPERCORN? WANT TO TRY THIS BUT NEED TO KNOW WHAT TO USE. CANNOT RATE TILL I TRY IT.
