You can create up to five timers

Ingredients

  • 1 whole orange (well washed)
  • 1/2 cup orange juice
  • 1 egg
  • 1/2 cup butter
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 cup honey or white sugar
  • 1 teaspoon salt
  • 1/2 cup chopped dates

Directions

Preheat oven to 400 degrees F.

Cut orange in pieces and remove pits. In food processor, put in first 4 ingredients. Blend for 3 to 4 minutes. Sift dry ingredients into a bowl. Mix in chopped dates. Blend again until mixed. Spoon into greased muffin pans. Bake at 400 degrees F for 15 minutes. (If using honey, add with first 4 ingredients, if using sugar, add to dry mix.)

    Very good and EASY recipe to follow! Used room temperature unsalted butter, honey instead of sugar, 4 teaspoons orange pulp, no dates and 3/4 cup of chopped pecans. Orange didn't have to be cut in pieces if it was placed in food processor with other wet ingredients.

    Cooking time is closer to 18-19 minutes. But I enjoyed mine warm from the oven!! Will share with others (if they last that long!

    I made these muffins yesterday and they are awesome! I made 2 changes: 1 I didn't have any orange juice in the house so I substituted a 1/2 c. of milk. 2 I used 1 c. of dates instead of 1/2 a cup. I love dates and I could see I would need more. I had one for breakfast this morning and it's still moist and fresh! Yum!!! Signed, a fellow Canuck (Vancouver - the other centre of the universe ;

    My Husband and I made these tonight and they are so good! They were easy to make, and we almost didn't bake them because the batter was so yummy.
    We used the honey instead of sugar, no dates, some walnuts and 4 teaspoons of orange pulp. The muffins turned out Incredible!
    We recommend this recipe to everyone.
