Ingredients

  • 4 eggs
  • 1 cup half-and-half
  • 1/2 cup mayonnaise
  • 2 tablespoons flour
  • 1/3 cup minced onions
  • Salt and garlic powder
  • 8 ounces shredded Swiss or sharp cheddar cheese
  • 1 package frozen chopped spinach
  • 1 premade piecrust

Directions

Preheat the oven to 350 degrees F.

In a large bowl, whisk together the eggs, half-and-half, mayonnaise, and flour. Add the remaining ingredients. Place the piecrust in a deep, 9-inch pie dish. Pour the egg mixture into the crust and bake for 45 minutes to 1 hour or until the top is golden brown.

    I have made many quiches over the years and this is by far one of the best and easiest! I have varied the cheese and the vegetables and always get raves when I serve this!

    I made two of these. One with spinach and cheddar and another with bacon and swiss. I sautéed the onion and real garlic (instead of garlic powder until lightly caramelized. It was really wonderful! Am planning to make again soon.
