Ingredients

  • 2 regular or English cucumbers
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon toasted sesame seeds
  • 1/2 bunch fresh mint, leaves only
  • Kosher salt

Directions

Slice the cucumber into thin rounds. Put them into a bowl and toss them with the soy sauce, sesame oil, sesame seeds, mint leaves and salt, to taste.

    This is my new favorite snack! I leave out the mint and its a quick throw together for when I am running around. It provides the same satisfaction as eating a bag of chips only 3/4 the calories! I keep cucumbers on hand in the kitchen and my slicer close, toss everything into a ziplock bag and bring it everywhere. I love the sesame flavor when Im feeling snacky and I dont even crave the chips anymore.

    It looks like shiso leaves in the photo, but since it's in the same family as mint, I could be wrong. I'd use shiso, though, and add some edamame, and maybe a pinch of bonita flakes to add a smoky flavor to this salad.
