Stuffed Bacon Cheeseburgers

4 burgers

  • 1/2 cup shredded Monterey jack
  • 4 slices cooked bacon, chopped
  • 1 pound ground chuck
  • Kosher salt and freshly ground black pepper
  • 4 large hamburger buns, split
  • Ketchup, mayonnaise, and mustard, for serving
  • Lettuce, sliced tomato, onion, and avocado, for serving

Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.

Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.

Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

    This is by far my new favorite burger recipe. It's a hit not only with my husband and I but with everyone else we've made it for! The only thing that makes this better is putting BBQ sauce on it as well, although it's delicious even without the BBQ sauce!
    Used peppered bacon and added 1 teaspoon of Montreal seasoning... VERY yummy. I think it would be great with pepperjack or even a nice blue cheese for more flavor.
    Substitute crumbled blue cheese for the jack. Mmmm....
    Expected great things after reading all the reviews but I don't know if I'll ever do this one again. I even tried enhancing it with worcestershire and roasted garlic mayonnaise and even that didn't help. Needs something else....
    we tried these over a year ago and have never made a "normal" cheeseburger since then! Even my mother-in-law makes these now each time she has burgers....grilling them up for her friends! We generally make them in a grill pan inside but they taste awesome that way too!

    We do add a little worcestershire sauce to the meat before making the patties....and we always carmelize onions to place on top! What is so great is that the inside of the burger is stufffed with the tasty stuff so you can more easily add your vegetables to the top without everything spilling out all over the sides!

    You won't regret this recipe to kick it up a notch with your burger making!
    The bacon-cheese filling to these burgers really adds to both the flavor and moistness of the meat. I only cooked them for 5 minutes per side on an outdoor grill and they were perfectly done to medium. I think the eight minutes each side would have been way too long.
    We made these for some friends who came over and grilled out. So good!!! My best friends even made these for my 30th Birthday Party for all our friends and family! Everyone loved it!!! Make these and you wont regret it!!!

    This burger doesn't need any mustard or catsup/ketchup. This burger is a true grilling masterpiece. Very flavorful and not hard to prepare or grill at all.

    my boyfriend and i love these burgers... here are some suggestions for people who don't think they have enough flavor... i always put a little chili powder in the beef... i also put some bacon and a slice of monterey jack on top of the burger. for an extra kick, i make roasted garlic mayo for the buns and slice some avocados to top off the burgers. hope that helps!
    This is a simple and easy meal. It would be great for a nice family BBQ.

    These burgers are tasty, but most of the cheese cooks out and the bacon just becomes part of the hamburger. I find it better to put the cheese and bacon on top of the burger.

    These burgers are awesome! I used turkey bacon instead with colby and monterrey jack shredded cheese for the stuffing. I also added some garlic powder to season beef. My fieman hubby raved about it! They tasted wonderful and I will be making this again
