pizza pan

A round metal sheet used to bake pizza. The typical pizza pan ranges in diameter from 12 to 15 inches and has a shallow, rounded raised rim. For aficionados of thick crusts, there are deep-dish pizza pans with 2-inch sides. Perforated pizza pans have dozens of small holes, which allow moisture to escape and promote even browning. Pizza pans can be found in gourmet kitchen shops.
