Ingredients
1/4 cup extra-virgin olive oil
23 large cloves garlic, minced (about 1/3 cup)
2 large carrots, grated (about 2 cups)
1 large yellow onion, finely chopped
Kosher salt and freshly ground black pepper
1/4 teaspoon (or more) crushed red pepper flakes
12 ounces tomato puree
1 tablespoon Sicilian (or regular dried) oregano
Directions
- Heat the oil in a large skillet over medium heat. Add the carrots, onions and a pinch of salt and cook, stirring occasionally, until the vegetables caramelize and brown, 8 to 10 minutes. Add the garlic, season with pepper and the red pepper flakes and cook until softened. Add the tomato puree and oregano and simmer over low heat until thickened, about 1 hour. Add more red pepper flakes, salt and pepper to taste.
