The Gold Coast is my take on a daiquiri. I love rum. I love lime juice and sugar. It is such a beautiful cocktail, but what I wanted to do is create a rum punch of sorts, and that's what the Gold Coast is.

Ingredients

3/4 ounce lime juice

3/4 ounce pineapple juice

1 ounce simple syrup, made with equal parts sugar and water

2 dashes Dale Degroff?s Pimento Bitters

2 ounces aged rum, Bacardi 8 year preferred

2 ounces champagne or sparkling wine

Cocktail straws, for garnish

Orchid and lime wheel, for garnish

Directions

  1. In a shaker, add lime juice, pineapple juice, simple syrup, and rum. Fill with ice, cover, and shake. Remove cover and pour into a serving glass with ice. Top with champagne or sparkling wine. Stir with a cocktail spoon. Garnish with an orchid and a lime wheel.
