Ingredients

One 12-ounce package extra-firm silken tofu

1/2 avocado

1/4 cup pure maple syrup

1/2 teaspoon pure vanilla extract

1/3 cup cocoa powder

Fresh fruit, nuts, chocolate chips, or whatever you'd like, for topping

Directions

  1. Rinse the tofu and place in a blender or food processor. Add the avocado, maple syrup and vanilla extract. Blend or process until smooth.
  2. Add the cocoa powder and blend or process again until smooth.
  3. Transfer the mousse to bowls. Top with fruit, nuts, chocolate chips, or whatever you'd like, and enjoy!

I loved the recipe , it was super simple, my suggestion is to cut back on the cocoa powder as it can be really bitter...will definitely make again!!
