Lychee Martini

Ingredients

1 (20-ounce) can lychee fruit

2 ounces crushed ice

3 ounces lychee liqueur (recommended: Soho Brand)

2 ounces vodka

Splash lime juice

Splash Champagne

Directions

  1. Pour can of lychee fruit into a strainer. Reserve 2 tablespoons lychee juice.
  2. In a shaker, add crushed ice, lychee liqueur, vodka, lime juice and reserved lychee juice.
  3. Shake well. Pour mixture into chilled martini glasses over a few pieces of lychee fruit from can. Add a splash of Champagne and serve.

I made these martinis for girls night on a Wednesday before Thanksgiving. It was hands-down the best lychee martini we have ever experienced, and we have them frequently at an Asian restaurant. The splash of lime juice and champagne set it off. I could not find the Soho lychee liquor; however, I ordered the Monin brand and it was just as good
