Lychee Martini

I go for a lychee martini when I want something crispy and refreshing, fruity, but not too sweet. The lychee fruit actually has acidic floral notes that really come through in this cocktail. The tropical fruit’s subtle sweetness comes through in two ways: through the lychee syrup and in the fruit garnish in the glass.

Ingredients

1 teaspoon extra-dry vermouth

1 canned lychee plus 2 ounces lychee syrup

3 ounces vodka

1/2 cup ice

Directions

Special equipment:
martini glass, cocktail shaker
  1. Rinse a martini glass with the vermouth and dump the excess. Add the lychee to the glass.
  2. In a chilled cocktail shaker, combine the vodka and lychee syrup with the ice. Shake until chilled through, about 30 seconds. Strain into the prepared glass. Enjoy chilled.

I bought 2 cans of lychees recently wanting to make a martini like the one I had in Honolulu. Then, serendipitously, Katie Lee Biegel made one on the Dining through the Decades episode of The Kitchen! I made one today for Pau Hana with a PuPu platter. I don’t know if there is a better drink than a Lychee Martini!! So perfect!!
