Chocolate-Almond Butter Fudge Sauce

Ingredients

1/2 cup heavy cream

1/4 cup water

1/4 cup unsweetened cocoa powder

1/4 cup honey

1/2 teaspoon kosher salt

11 ounces semisweet chocolate, finely chopped

1/4 cup almond butter

2 teaspoons vanilla extract

Directions

  1. Place cream, water, cocoa powder, corn syrup, and salt in a small saucepan and mix to combine. Bring to a simmer over medium heat, whisking frequently, mixture is slightly thickened, about 3 minutes.
  2. Remove from heat and add chocolate, almond butter, and vanilla. Stir until chocolate is melted and sauce is smooth. Serve warm.

A-maze-ing! I used honey instead of corn syrup (based on comments from a reviewer). I was skeptical about the honey, but I don't regret it a bit. Perfect. I used this sauce as the 'ripple' in espresso fudge ripple gelato - and it is incredible. But I would also drizzle it on just about anything - though bananas bad crepes come to mind. I expected an excellent sauce, and this exceeded my expectations in every way. (It yielded more than two cups for me though - so I recommend halving the recipe)!
