Ingredients

2 pounds cooked medium red potatoes, cut into 1-inch cubes

1 1/2 tablespoons chopped garlic 

1 1/2 tablespoons chopped peeled ginger 

1 1/2 teaspoons ground cumin 

1/2 teaspoon chili powder, plus more if desired 

1/2 teaspoon paprika 

Salt and black pepper 

4 tablespoons cooking oil 

1/2 teaspoon fenugreek seeds

1/3 teaspoon ground turmeric

Cilantro leaves, for garnish

Directions

  1. In a bowl, mix together the potatoes, garlic, ginger, cumin, chili powder, paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
  2. Heat the cooking oil in a small pot; add the fenugreek seeds. Once the fenugreek starts to turn black, remove the pot from the heat, add the turmeric and immediately pour the hot oil over the potato mixture. Mix well.
  3. Serve in a bowl garnished with cilantro.
