Beetlejuice, Beetlejuice, Beetlejuice

This drink is so flavorful that bartenders at The Gin Bar often recommend it as a mocktail, minus the mezcal.

Ingredients

2 cups sugar

1/3 cup honey 

1/3 cup apple cider vinegar

3 large beets, peeled and roughly chopped 

1 ounce fresh lime juice, plus lime wedge for garnish 

1 ounce mezcal 

2 ounces seltzer 

1 ounce ginger beer 

Directions

  1. Make the beet syrup: Bring 1 cup water, the sugar, honey and vinegar to a simmer in a small saucepan. Simmer until the sugar dissolves, about 10 minutes. Add the beets and simmer until softened, about 20 minutes. Strain through a fine-mesh sieve and let cool.
  2. For each cocktail: Combine 3/4 ounce beet syrup, the lime juice and mezcal in a shaker; shake well. Strain into an ice-filled glass. Add the seltzer and ginger beer. Garnish with a lime wedge.
