Bison Meatloaf Burgers with BBQ Sauce

Ingredients

Nonstick cooking spray, for the baking dishes

BBQ Sauce:

1 cup ketchup

1/4 cup dark brown sugar

3 tablespoons garlic powder

3 tablespoons onion powder

2 tablespoons molasses

3 teaspoons balsamic vinegar

Meatloaf:

2 pounds ground bison

10 cloves garlic, grated

3 large eggs

1 onion, grated on the large holes of a box grater

2 cups ketchup

1 cup Italian breadcrumbs

2 tablespoons ground cumin

2 tablespoons garlic powder

2 tablespoons sumac

Kosher salt and freshly ground black pepper

8 burger buns, toasted

Directions

  1. Spray 2 small baking dishes (roughly 7 by 5 inches and 1 1/2 inches deep) and preheat the oven to 375 degrees F.
  2. For the sauce: In a small saucepan, add the ketchup, brown sugar, garlic and onion powders, molasses and balsamic over medium-high heat and reduce by half, about 10 minutes.
  3. For the meatloaf: Add the bison, garlic, eggs, onion, ketchup, breadcrumbs, cumin, garlic powder and sumac, and sprinkle with salt and pepper in a large bowl; mix very well. Add the meat mixture to the prepared baking dishes, then score the top of each and bake for 20 minutes. Remove from the oven and top each with some of the BBQ sauce. Return to the oven and bake 20 minutes more, basting with the BBQ sauce every 5 minutes.
  4. Let rest for 20 minutes, then carefully remove the meatloaves from the baking dishes to a work surface. Drizzle with the pan drippings. Slice into 3/4-inch slices. Serve on the toasted burger buns, topping with any remaining BBQ sauce before putting on the bun tops. Enjoy.

BBQ sauce wayy<br /> too sweet and thick for my taste. I used half game half 80/20 hamburger. Maybe it could use the game"iness". It was ok. I do love the grated onion. I Will sear tomorrow for some more texture.<br />
