Cardamom Waffles

Ingredients

Lemon Butter:

6 tablespoons unsalted butter, at room temperature

1/2 teaspoon ground cardamom 

1/2 teaspoon lemon zest 

1/4 teaspoon kosher salt 

Waffles:

1 cup all-purpose flour

1 teaspoon ground cardamom 

1/2 teaspoon baking powder 

1/4 teaspoon kosher salt 

1/4 teaspoon baking soda 

1/2 cup whole milk 

1/2 cup plain whole-milk yogurt 

6 tablespoons grapeseed oil 

2 large eggs, separated 

1 tablespoon sugar 

Unsalted butter, for cooking

For Serving:

Lightly toasted and finely ground pistachios

Seasonal fruit, such as pomegranates and diced pear 

Good-quality maple syrup 

Fresh mint leaves 

Directions

  1. For the lemon butter: Add the butter, cardamom, lemon zest and salt to a bowl. Mix until combined. Turn out onto a piece of plastic wrap and roll into a log. Refrigerate until it hardens, at least 2 hours.
  2. For the waffles: Combine the flour, cardamom, baking powder, salt and baking soda in a bowl and whisk together. Mix the milk, yogurt, grapeseed oil and egg yolks together in another bowl. Whisk the egg whites with the sugar in another bowl until nearly stiff peaks form.
  3. Combine the flour mixture with the milk and yogurt mixture, then fold in the egg whites.
  4. Preheat the oven to 200 degrees F. Preheat a waffle iron and line a baking tray with a wire rack.
  5. Grease the waffle iron with a little butter. Cook waffles according to the waffle iron instructions. Remove to the prepared baking tray. Place in the oven until all the waffles are made and ready to eat.
  6. For serving: Stack 2 waffles and top with a 1/2-inch-thick piece of lemon butter. Sprinkle with ground pistachios, top with seasonal fruit and drizzle with maple syrup. Garnish with fresh mint and serve.

Ty. Good texture and taste. Did half white, half whole wheat flours. Next time will add more cardamon to mix and butter. And more lemon zest to butter.
