Wings for Wings in a Pigskin

Ingredients

Sauce:

2 sticks butter

1 cup minced bell pepper

1 cup minced onion

3 cloves garlic minced

1 bottle hot sauce (recommended: Frank's)

2 tablespoons mustard

2 cups ketchup

3/4 cup brown sugar

Salt and freshly ground black pepper

3/4 cup Worcestershire sauce

1/2 cup vinegar

1/8 cup dark molasses

Chili powder

Ground allspice

Crushed red pepper flakes

28 ounces tomato sauce

1/4 cup olive oil

1 bottle light beer (recommended: Labatts Blue light)

Dry rub-TOP SECRET, but here are the ingredients:

Chili powder

Paprika

Roasted garlic powder

Basil

Black pepper

White pepper

Cayenne

Celtic sea salt

Brown Sugar

36 to 48 chicken wings

Directions

  1. Preheat oven to 350 degrees F.
  2. For the sauce:
  3. In a medium saucepan, over medium heat add the butter and let it melt. Add all the vegetables, including the garlic, and saute until tender. Stir in all of the liquid ingredients and Bring a large pot of salted water to a boil over medium-high heat.
  4. To a boil, add dry ingredients, use hand blender, add beer, blend more to smooth.
  5. Combine all the rub ingredients in a small bowl. Coat the wings with the dry rub and let sit 10 minutes. Chant to the wing Gods.
  6. Place in oven box and slow cook. When ready to plate hit with sauce and place on grill to ready to present.

Made these for a tailgate party in Houston. Instead of baking, I grilled the wings after rubbing with Essence. Chared on hot side of grilll then moved to cool side to bake. Basted with sauce 2-3 times while on cool side of grill. Made up a simple blue cheese dipping sauce. Really really good! I've made them again since.!
