Ingredients

1 box corn muffin mix

1/2 cup cheddar cheese, grated

1 cup corn kernels

2 tablespoons pickled jalapenos, minced

1 tablespoons oil

Directions

  1. In bowl prepare muffin mix according to directions on box. Stir in corn, jalapenos and cheese. Fill greased muffin tins 3/4 of the way full. Bake according to directions on box.

This is our latest family favorite! Made it to go with chili and everyone loved it! My husband - who loves all things hot and spicy -enjoys it very much and my little guy - who isn't a fan of hot and spicy - loves it too. The cheese mellows the heat and makes it yummy! The corn adds a great texture. Goes together fast and will be perfect for unexpected company or big groups! We'll definitely make it again!
