Chickpea Salad

Ingredients
1 can chickpeas, drained and rinsed
1 teaspoon dried mint
1 tablespoon cider vinegar
1 small tomato, seeded and diced
2 tablespoons olive oil
Salt and pepper, to taste
1/2 red onion, thinly sliced
1 clove garlic, minced
Directions
- In medium bowl combine chickpeas, tomato, onion, garlic and mint. Add vinegar and olive oil. Toss to coat. Season with salt and pepper. Chill and serve.
