Directions

  1. Combine 1 diced avocado, 1 diced seeded plum tomato, 2 tablespoons each minced fresh cilantro, red onion and seeded jalapeno pepper and 1 tablespoon fresh lime juice in a medium bowl; season to taste with salt. (The guacamole can be covered, with plastic wrap pressed directly on the surface, for up to 4 hours.)

So good, we made it twice in a week!<div><br /></div><div>We just got our magazine in the mail. We had 4 relatives arrive for a visit. This guacamole recipe sounded good, so we tried it. It was a big hit! As soon as the relatives left, we made a second batch for ourselves to enjoy without having to share!</div>
