Toasted Almond Mochas

Ingredients

8 ounces sliced almonds

4 cups milk

4 tablespoons honey

4 shots espresso or 1 cup very strong coffee

4 tablespoons good quality cocoa powder

Directions

  1. Preheat the oven to 350 degrees F. Spread the almonds on a sheet tray in 1 even later and toast in the oven until fragrant and light golden, about 7 minutes.
  2. Put the toasted almonds and milk in a small saucepan and heat over medium heat until steaming and hot, but not boiling, 5 to 7 minutes. Add the honey and stir until incorporated, then strain through a fine mesh strainer.
  3. In a warm mug or heatproof glass, mix an espresso shot or 1/4 cup coffee with 1 tablespoon cocoa powder and then top with the toasted almond-infused milk. Repeat with remaining espresso, cocoa and hot milk.

Drinking my coffee with homemade almond milk now! It's kind of amusing how I came across this recipe. I recently got almonds, but didn't realize they were raw. OK, I wasn't paying attention -typical man! I decided to roast them. 10min was just a bit too long. They were slightly burnt bottom side. Ate a handful - they were tolerable, not terrible! It smelled like coffee. More experimenting! Coffee grinder - ground them up smooth. Used my Keurig SoloFill and made Almond Tea. Add Tbs of AgaveSyrup and milk Yum!. Grinds appeared like peanutbutter with water still in it as if water stopped passing through it. The tea had oil on the surface, too. More toasting? Re-toasted another 5 min, and ground them. New idea was mix up coffee grinds and ground almond for the next morning. I set that aside and searched google to see if anyone had done this. And THAT is the story of how I landed here!!
