Cucumber Salad

Ingredients

3 cucumbers

1 garlic clove

1 cup white wine vinegar

1 cup water

1/2 cup sugar

2 teaspoons salt

Fresh ground black pepper

2 tablespoons chopped parsley

1/2 small red onion, sliced into rings

Directions

  1. Score cucumbers with a fork and cut into slices. Place them in a deep jar with the garlic and chill overnight. Combine the vinegar, water, sugar, and salt in a saucepan and bring to a boil. Remove from the heat immediately and chill it over an ice bath. Pour the dressing over the cucumbers and season with pepper and parsley. Chill covered overnight. Serve in a decorative bowl; garnish with red onion rings.

A favorite of my husband, I add thinly sliced jalapeno but skip the garlic and parsley.  Wish there was a picture with this so I could PIN the recipe to my Pinterest.  The proportions on the dressing are perfect!
