Dulce de Leche

Ingredients

1 gallon milk

3 cups sugar

3 tablespoons vinegar

Directions

  1. In a large stockpot, add the sugar to the milk. Bring to a boil. Separate with the vinegar. Cook until water disappears and only the solids are left and caramelized (about 3 hours). Serve with queso blanco and/or candied fruits.

I just made a batch of this and I followed the recipe exactly. The milk curdled when I added the vinegar. I keep cooking and stirring, hoping some magic would happen and I would end up with dulce de leche. The resulting slop was sweetened cottage cheese - a far cry from dulce de leche. It is revolting.
