Flavored Sugars Citrus Sugar

Ingredients

Zest of 1 lemon and 1 orange

1 cup granulated sugar

LAVENDER SUGAR

2 tablespoons dried lavender blossoms, all stems removed

1 cup granulated sugar

AUTUMN SPICE SUGAR

2 or 3 allspice berries or 1/4 teaspoon ground allspice

2 or 3 coriander seeds or 1/4 teaspoon ground coriander

1/4 teaspoon ground cardamom

1/2 teaspoon cinnamon

1/4 teaspoon ground ginger

1 cup granulated sugar

Directions

  1. Place the sugar in a bowl of a mini food processor. Carefully remove the zest from the lemon and orange using a fine grater. If you use a square grater, wrap it in plastic wrap. This makes it easier to remove all of the zest that clings to the grater. Scrape the zest into the sugar in the processor. Process for 15 to 30 seconds to blend.
  2. Store tightly sealed in a glass jar. If the sugar hardens, break it up with a fork before using

LAVENDER SUGAR

  1. Place the lavender in the bowl of a mini food processor or spice mill. Process until ground into a fine powder. Add the sugar and process for a few seconds to combine.
  2. Store tightly sealed in a glass jar. If the sugar hardens, break it up with a fork before using.

I pulsed 15 seconds & it didn't look blended. I pulsed an additional 15 seconds. Now it looks and tastes like powdered lemon sugar. Next time I will be more careful time wise.
