Ingredients

1 (5-ounce) jar pimiento cheese spread (Kraft)

1 (8-ounce) can pineapple tidbits, drained 

1/2 (10.5-ounce) bag miniature marshmallows (about 3 1/3 cups) 

1 (8-ounce) container frozen whipped topping, thawed 

Directions

  1. Stir together the cheese spread and pineapple in a large bowl. Add the marshmallows, stirring well to combine. Fold in the whipped topping and mix well. Serve immediately or cover and refrigerate overnight.

Cook’s Note

The key to this is mixing, mixing, mixing. Mix until you think it's mixed, and then mix it some more! You will see it getting fluffier and more cohesive. I find it's best if made the night before and refrigerated.

Instead of the pimento cheese, I used a box of Vanilla instant pudding 3.4 oz combined with a 20 oz can of chunk pineapple, including the juice. Stirred until combined, then folded in the thawed cool whip and marshmallows . It only takes a few minutes to thicken. Very yummy!!
